If you're doing a chilli and there's some in the shops (I don't know how popular they are over there) try leeks instead of the onions and garlic. Don't throw away the green end bits like Brits do, chop them finely and add them a bit later. Works very nicely.

You can put anything in chili really.
The one main ingredient that I refuse to use is chili powder, it absolutely ruins a good tasting chili's flavors.
My home canned tomatoes are what makes it so sweet and flavorful.
Canned tomatoes in the tin from the store are all salt and suck.
And some nice cheese to sprinkle on the top of each bowl when it is hot.

Me too. I like chilli flakes though; they give a deeper flavour. Best to get the milder ones since you can put more in to get the flavour.
